余市蒸馏所由首位在苏格兰学习威士忌蒸馏技术的日本人竹鹤政孝建立。竹鹤政孝也是山崎蒸馏所的建造者之一，他后来因理念不合离开了山崎，并于1934年在与苏格兰气候相似的北海道建立余市蒸馏厂，以生产酒体浓厚、拥有烟熏味的单一麦芽威士忌而闻名，高级的原酒在时间的熏陶下与橡木桶特有的香气融和出略带果实酸甜华丽丰富的香气。入口后、夹带淡雅的烟熏泥煤味、温醇顺喉的口感是其最大的特色。入桶时间：1989年10月10日；装瓶时间：2005年7月29日；桶编号：127032；酒精度数：62%1支 700ml
