Versatile French chemist and statesman (1756–1832) who introduced the process of adding sugar to wine, called 'Chaptalization.' Autograph endorsement in French, signed “Chaptal,” written at the top of a letter sent to Minister of War Louis-Alexandre Berthier, one page both sides, 7 x 9.75, September 1, 1801. Chaptal endorses the letter as Minister of the Interior. In fine condition, with small mounting remnants to the corners of the signed side.
